Purification and Characterization of a Novel Ginsenoside Rc-Hydrolyzing β-Glucosidase from Armillaria mellea Mycelia

This research focused on isolating and studying an enzyme from honey mushroom that can convert a common ginsenoside (found in ginseng) into more medicinally valuable compounds.
