Objective

Results
Shaft supplemented with wheat bran produced highest protein content (19.14%), bunch alone gave highest fat (1.70%), and fermented bunch produced highest vitamins A, E, and D. Supplemented substrates produced mushrooms with better nutritional values than non-supplemented substrates, with wheat and rice bran supplements showing superior results.
Conclusion
Palm oil bunch and shaft supplemented with wheat bran and rice bran are ideal substrates for cultivating P. ostreatus with enhanced nutritional quality. Substrate composition significantly impacts the nutritional profile of mushrooms, and agricultural waste can be effectively diverted into mushroom production for economic and nutritional benefits.
