Fortifying a meal with oyster mushroom powder beneficially affects postprandial glucagon-like peptide-1, non-esterified free fatty acids and hunger sensation in adults with impaired glucose tolerance: a double-blind randomized controlled crossover trial

Summary
This study tested whether adding powdered oyster mushrooms to a meal could help people with impaired glucose tolerance manage their blood sugar and appetite. While the mushroom powder didn’t reduce blood glucose spikes as expected, it did lower fat levels in the blood, increase a hormone that promotes fullness, and reduced hunger. The results suggest that adding oyster mushroom powder to meals could be a simple dietary change that helps prevent diabetes and weight gain.
Background
Impaired glucose tolerance (IGT) is characterized by insulin resistance with postprandial hyperglycemia and hypertriglyceridemia. Cereal β-glucans have shown effectiveness in improving postprandial metabolism. Mushrooms rich in β-glucans may provide an alternative fortification source with lower available carbohydrate content.
Objective
To investigate whether fortifying a meal with powder from Pleurotus ostreatus improves postprandial glucose, lipemic response, gastrointestinal hormone release, and appetite sensations in adults with IGT.
Results
Postprandial glucose, insulin, triglycerides, GIP and ghrelin did not differ between enriched and control meals. NEFAs-AUC was 14% lower after enriched meal (P=0.026) and GLP-1-AUC was 17% higher (P=0.001). Hunger AUC was 22% lower after enriched meal versus control (P=0.031).
Conclusion
Fortification of meals with oyster mushroom powder as a β-glucan source may improve immediate postprandial metabolic changes including reduced NEFAs and increased GLP-1, with decreased hunger sensation. Long-term effects could reduce risk for obesity and type 2 diabetes development in IGT subjects.
